An objective classification of condensation regimes in direct contact condensation

Abstract Intensified heat treatment, using direct contact condensation (DCC), is applied in the production of dairy products to ensure a high level food safety. The key challenge with DCC fouling due protein reactions that limits operational efficiency and sustainability. Using regime map can improve decision‐making. Pilot plant scale experiments were conducted for wide range steam mass fluxes inlet temperatures at low channel pressures. High‐speed images recorded analyzed obtain penetration lengths plume area. experimental data image analysis supplemented temperature pressure measurement, processed machine learning (ML) develop driven model predict maps. linear discriminant (LDA) was found be most suitable model. From ML models it also best parameters make are pressure, subcooling temperature, water Prandtl number, relative velocity ratio between gas liquid. outcomes presented various two‐dimensional New maps proposed number as dimensionless parameters.
